The redevelopment of the 1914 Mercantile Hotel is designed to revitalise the hotel without losing its historic charm and authenticity. Reinvigorating the traditional pub character of the Hotel, the project will breathe new life into the existing public bar and hotel accommodation, whilst also providing new bars, a bistro with courtyard dining and a rooftop function bar.
On the ground floor, the restored front bar will connect to a new dining bistro dining area and open up to a rear courtyard with a backdrop of the 1914 sandstone walls. On the upper levels the tradition hotel accommodation will retain its historic character and be upgraded to provide boutique ensuite accommodation. The new rooftop bar is a contemporary take on a saw-tooth roof - a fine lightweight structure creating unique views up to the Sydney Harbour Bridge.
